RICOTTA  FRITTERS

2 EGGS
1 CUP RICOTTA CHEESE
PINCH SALT
1/3 CUP FLOUR
1 1/2 TSP SOFTENED BUTTER
1 1/2 TSP GRATED LEMON RIND
OIL FOR DEEP FRYING
1/2 CUP HONEY

Beat the eggs until light, add the ricotta cheese and salt, beating
well.

Then add the flour, butter, and lemon rind beating well. Let sit.

Drop by table spoonfuls into hot oil 3-4 at a time. Drain on paper
towels and keep warm. When all are fried, put in a bowl and drizzle the
honey all over. Serve immediately
                     Serves 4

*               make this dessert batter at least 2 hours ahead and not
more than 3 1/2 and let sit at room temp. A nice end to an Italian meal.
